The anchor attraction at the midweek Westmont Farmer's Market is entrepreneur Kevin Stanton's Salad Station. Watch how he makes green even greener.



Fans of the Collingswood Farmers Market who can't wait the full seven days between its appearances are taking their Wednesday business just a little farther up Haddon Avenue into Westmont.

That's in no small part because of its dinnertime hours (4 to 7 p.m.) and focus on prepared foods, like crab cake sandwiches, sweet and savory crepes, gourmet desserts—and salad in a cup.

The surprisingly filling, unsurprisingly healthy and inexpensive (just five bucks) entree is served up at Kevin's Salad Station, a food truck that anchors the Haddon Avenue face of the market and has become one of the market's biggest draws.

With an extensive list of ingredients served in compostable cups with wooden forks, owner Kevin Stanton has an eye as much on sustainability as on nutrition. And people are taking notice.
